Artists often create acoustic versions of their songs (compare, for instance, Jessie J's song - Price Tag studio vs. accoustic version - and it's obvious which one is better).
Some of the musicians are known for being mostly accoustic (Joan Baez for instance or early Bob Dylan).

The Fab Four made some beautiful accoustic tracks and ballads.
This is suggested track list which consists of 30 songs, more or less in a chronological order.
It's my personal choice - so, some songs are surely missing - and someone else would surely make a different listing.
Some songs are not strictly accoustic - but they start like that (Piggies), so they are included.

I knew it that something would be missing. 

Well, back in the 80's, a compilation called 'Beatles Ballads' has been issued on a record by Parlophone - and interesting, never pressed on a CD officially.

A good selection. I must say that I didn't thought of 'Hey Jude' as ballad - probably because of Paul's shouting in the fade-out - but, yes, it starts as ballad - Paul sings and plays the piano,
then guitar and tambourine come in, and later, the drums.

Also, on my list, I've put I Me Mine because I really like the tune & orchestration - although For You Blue is more gentle - but it has that 'bluesy' sound which I don't fancy that much.

Although I like I Me Mine, I probably wouldn't class it as acoustic or a ballad. It's actually quite a heavy song instrumentally. It's not a route George ever really took again.

Well, the lyrics are - gentle, but the song is powerful. 
For comparison - 'And I Love Her' is a gentle ballad (issued on AHDN album).
But, there's the Anthology version of 'And I Love Her', which can be described as a 'hard rock number' (drums & guitars). The song could be published in that 'rock' version, if Paul had chosen so.
