Julio Jara, requinto player with Los Paraguayos, tells an anecdote from that day (=please: excuse my poor translation):
"...In the general rehearsal, before the show, Los Paraguayos were rehearsing and The Beatles were waiting listening to them. After thier rehearsal, Los Paraguayos went out to have a rest at their dressing rooms, and Julio Jara -the requinto player- left his requinto on one corner of the stage. Soon after, he heard that someone was playing his requinto. He went on-stage and saw a young guy with long hair and wearing jeans. He asked the young guy for his requinto, and the young guy gave it to him, apologizing for his behaviour, and telling that his guitar sounded amazing. He was only trying it, nothing else. The young guy was George Harrison, and Julio had believed he was one of the theatre workers. So Julio, realising that he had put his foot down, told him that it didn't matter. He only scared that a string could break and couldn't get another one ready for the show..."

Of course, George later became a big fan of the ukelele, so must have had an interest in the smaller, higher pitched string instruments from very early on.

Correct. And there are some interviews, dated november 1963 to november 1964, where he speaks about his admiration for Andrés Segovia. No wonder that he were interested in that small Spanish guitar when he saw it...

Could it have been the other way round? I mean, by watching Los Paraguayos on November 4th, 1963, George might have been triggered to check out Spanish/Latin music and bumped into Segovia. Btw, the brand of the guitar of Julio Jara?

I don't think so, because by February 1963 he stated that he was interested in Spanish guitar. This is from 15 February 1963 NME issue:
