It was just a prop. According Stephen Goldblatt who photographed The Beatles' Mad Day Out: "They had recently recorded “Hey Jude” and so Paul is playing “Hey Jude,” and they’re all singing, and the parrot is just a prop that Paul’s girlfriend brought along. She was the prop girl. It was taken in the Mercury Theatre in Notting Hill."
