Definately the intro to the Let it be version of "I've got a feeling". I've never heard that intro duplicated sucessfully. I also love the "I've got a feeling..A feeling deep inside..oh yeah..oh yeah..Dats right!".(Paul McCartney is so cool lol) Another part I love is how he shouts "Yeah!!" throughout the song..makes you want shout with him. I love that short guitar solo in the middle of the song and the bass in the whole song.

I love the blaring intro to "Helter Skelter"...you know exactly what song it is when it starts. The harmony vocals by John and George are suberb "Da Da Da Da!" and the "Aaah!!", no one will ever be able to do the harmony vocals as superb as them...no one. I love when Ringo joins on the drums on 0:06 of the song, and of course Ringo's "I've got blisters on my fingers!!"

I'll post more when I can think of some lol

The quick bass fill (sounds like he is sliding up to 12th...a guess) that follows the line
"Soon we'll be away from here" off 'You Never Give Me Your Money' ..around the 2:40 mark.

- Ringo's heavy drumming part in Strawberry fields forever.
- "Get baa-aa-a-ack!!"
and the rambling Paul does in the end.
"get back Loretta, you're mama's waiting for ya. Wearing a high heel shoes..and a low neck sweater, get back Loretta"
- Bass line in Dear Prudence that descends in semitones.

Paul's intro to While My Guitar Gently Weeps as well as his backing vocals and oooo at the end. And I assume it's him doing the very last Yeah Yeah thing, so that too.

Can I just say Paul in general? Because basically anything he's connected to ends up being magical.  ;D

Most of those already listed make my list, but my favourite moment is the primal scream leading into the outro in I Want You (She's So Heavy).  Still gives me a shiver most times I hear it, especially as the bass just keeps on doing its thing behind it.

The french horn in "For no one"!

The raise in Pauls voice at the end of "Nowhere man"!

the "cha cha boom" in besame mucho!

Paul making the shooting sound in the take of Rocky Raccoon of the anthology! and the "sminkin?" bit!

the "la la la" at the end of misery!

"bob the robert"!

and many more!

Paul's harmonies in I Want To Tell You. He rescued the song with his input on backing vocals and bass.
