These are the only ones I can think of at the moment:

With a Little Help From My Friends- Joe Cocker
Across the Universe- Rufus Wainwright
Let it Be- Joan Baez (but I like EVERYTHING she does...)

Apart from Joe Cocker's version of Little Help, I always thought the originals were better. I'm curious to see some suggestions over here to make my mind change.

No, the originals are almost always better. I just wanted to hear which versions that people didn't think were blasphemy.

Howie Day's version of "Help!" is excellent IMO.

Also, Jeff Beck I think did an instrumental version of "A Day in the Life" where the main melody is played by lead guitar. It's reeeeaaaally cool. Go download it.

I may have mentioned this before, but I hate Beatles covers.  The only cover I will listen to that I actually like is Joe Cocker's With a Little Help From My Friends.  Remember Fiona Apple's version of Across the Universe???? Yuck.

I hate most Beatles covers too. It never lives up to the original. I did like Phish's cover of Rocky Raccoon though. Some other alternative guy did it too and it was also cool. But that's about it. I used to like Joe Cocker's version of With A Little Help, but now it annoys me. Too overdone. I much prefer the simpler version Ringo sings.

Laurence Juber's acoustic rendition of "Strawberry Fields" is exquisite.
