Lets have, for example, Cocker's cover of With A Little Help From My Friends.
While Ringo's voice on the original follows the rhythm of the tune, Cocker
here doesn't sing it that way - and, plus, he shouts too much
at the refrain.

I disagree totally. Ringo does the definitive "music hall" version Paul wanted in keeping w/ the Pepper theme and feel, but Joe Cocker is well known for his slurred, bluesy renditions and he really made this song almost anthemic at Woodstock. His version doesnt infringe on Ringo's, I feel. Not at all. It's the only Beatle song cover that gets a definite A+ in my book. Kudos to Mad Dogs an Englishmen  :)

The Beatles covers I dislike the most are on the soundtracks of movies scored with Beatles music, most of the Sgt. Pepper movie soundtrack, and all the covers in I Am Sam and Across the Universe. The one exception I have is the soundtrack to All This and WWII, most of which I find quite good. It was put together by Lou Reizner who also did a great symphonic adaptation of Tommy in 1972 which some of the Who took part in, as well as Ringo Starr.
